
Ingredients:
- 1/2 cup diced onions
- 1/4 cup unsalted butter
- 1 cup shredded carrots
- 2 1/2 cups broccoli florets
- 1 1/2 cups vegetable or chicken broth
- 1 cup heavy whipping cream
- 2 cups shredded cheddar cheese
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp red pepper chili flakes
- 1/4 cup all-purpose flour
To start, grab a large pot and place the butter, onion, carrots and broccoli into the pot. Turn the burner on medium heat and let the ingredients simmer for 5-10 minutes, mixing occasionally.
Next, after waiting 5-10 minutes, slowly poor in the broth and heavy whipping cream. While doing this slowly add in the flour to thicken the soup. After adding all the broth, cream and flour, add in the salt, pepper and red chili flakes. When adding in the spices, this is a personal preference and you can always add in more or less depending on your preference.
Once, everything but the cheese is in, add the cheese and mix it into the soup. I left my soup on the heat and mixed for a few extra minutes to give enough time for the vegetables to soften. (Personally, I diced the broccoli so it would cook faster. This also allowed it to soften to my preferred liking).After this is done, you can serve the soup and enjoy!
I used vegetable broth in the soup and it turned out so good! I also added some sourdough to dip into the soup. Let me know how everyone’s soup turns out. Enjoy!
