
Welcome to my first post! I am going to start with a recipe that’s super easy and convenient, as well as affordable.
Ingredients needed (prep 30 min) (cook time 15-20 min)
- 1 pack of Extra Firm Tofu (will make extra)
- 1 cup of black beans
- 1/2 cup of corn
- 1/3 cup of chili lime Fritos chips (crushed)
- Lettuce
- 1 serving size of ranch dressing
- Soy sauce
- Bread crumbs
Starting with tofu…
First, you’re going to take the tofu out of the packaging and drain the excess fluid. I used my tofu presser (which I love!). If you don’t have a tofu presser, place your tofu on a cutting board and with a paper towel or kitchen towel, you’re going to press and get as much of the extra fluid off it. Once this is done, put a heavy object on top and let that press the tofu for about 30 minutes, depending on your preference. After this, take your tofu and cut it into strips, as thin or as thick as you want! Set two bowls out, one with a decent amount of soy sauce, and the other with bread crumbs. Submerge the strip of tofu in the soy sauce, coating all sides. Then, place into the bread crumbs (I usually get the Italian seasoned bread crumbs) and cover the tofu with the bread crumbs. After, repeating this step with all the slices, place on parchment paper or tin foil and place in the air fryer. Depending on how crunchy you want the tofu to be, I usually place my tofu in for 15-20 minutes at 400 degrees. Don’t forget to flip the tofu halfway through so all sides come out nice and crispy.
Next, we’re going to add the corn and beans into a sauce pan. I lay some olive oil on the pan and let it heat up being adding the corn and beans. Once the corn and beans are in the sauce pan, I like to add some seasoning. I usually season with pepper, seasoned herbs, garlic salt and cajun. This is not part of the recipe, but always fun to make it your own! Once seasoned, keep the heat on medium to low and simmer until the tofu is ready.
While we’re waiting for the tofu, corn and beans to cook, gather your preferred amount of lettuce, rinse and chop it up. Once this is done, grab your Fritos chips (another healthier alternative is using Quest Chips, chili lime flavor, both are delicious!) place the chips in a plastic zip lock bag and smash them up.
Now that everything is cooked. Place your lettuce as the base of your bowl. Followed by the corn and beans. Then, place you crispy tofu in the bowl. Add your ranch and garnish with the Fritos chips. You now have a meal for tomorrow as well! Hope you enjoyed this meal as much as I do!
